Take a look at this 12x1 configuration that I’m trying to drop on my 10K with 20x20’s.
I can get a 8x1 channel downstream bonding config to work just fine, but the modems aren’t taking this 12x1. They try to boot up with 12x1, but they reject it and come online with 1x1 narrowband.
What am I missing?

There are a few things to keep in mind here :
1) D3 modems can only connect to bonding groups (wideband interfaces) which have equal or less channels than the modem has tuners. So an 8x4 modem will not be able to any DS bonding with a 12-way bonding group. So if you have a mix of 4, 8, 16 tuner modems, then you need to make a 4-way, an 8-way and a 12-way bonding group for each modem type to use it's full DS bonding capability.
2) You have made a heap of 12 way bonding groups. You dont need them all. You just need 1. Remove all but the interface Wideband-Cable8/1/0:0. And then create some 8 way groups (aim to keep the channels contiguous freq). And also some 4 way if you have any 4x4 modems. eg

Quick answer is you also need 8-way bonding groups if you have 8x4 modems, and 4-way BG if you have any 4x4 modems.
